Cauliflower and Cheddar Soup

Cauliflower is packed with key vitamins and minerals including vitamin Cpotassium and folate.  It's also a good source of choline, a B vitamin known for its role in brain development.  You don't have to tell the family this.  They're just going to think it's yummy.
